Mexi-CAN Soup

This recipe is the best soup to make on a Sunday afternoon and is the absolute easiest thing EVER! I call it Mexi- CAN because (1) it is so easy anyone CAN do it (2) All you need are can's of the best Mexican inspired ingredients.

C and I made this after church today and will enjoy it while we watch the game tonight!

First chop up 4 chicken breasts into small pieces

Begin to cook the chicken in a large pot with a little olive oil and flavor with a pinch of taco seasoning
Once the chicken turns white add the following ingredients: 2 cans rotell

 1 can tomato sauce
1 can corn (optional)
 1 can chopped green chili peppers

 1 cup of your favorite salsa
 Cook on medium heat for about 10 minutes. Then right before you are ready to serve add 2 cans of black beans (drained)
Stir it all together and serve with crushed tortilla chips on top!
