DAY 7: Greek Jambalya

These next few creations are made at my parent's beautiful home in Annapolis! And today's Rachael recipe was perfected by my sweet mom!

Sadly, my camera ran out of battery during the cooking process so you'll have to settle for these camera phone photos. They just don't do this meal justice.

Preparation:
1 large onion (chopped)
1 large or 2 cans of stewed tomatoes
1 small can or a handful of drained black olives  (sliced)
a few sprigs of basil (chopped)
1/2 tsp oregano
 STEP 1: In a large saucepan heat up a little EVOO and then add all the veggies and herbs you prepared. Bring to a boil then immediately lower the heat.
STEP 2: add in the shrimp and cook until they turn pink, add S & P to taste
 STEP 3: Serve alongside broccoli, and cous-cous (which cooks just like pasta or rice) and top with delicious feta cheese.

  1. you're making this one post a day thing look easy-- and i know it's not!

    (AND it's a recipe a day... even harder!!)

    LOVIN the ideas... gonna really have to get better at grocery shopping if i'm gonna master any of the great recipes though.

    ... shouldn't be too hard-- remember, if you will, that grocery shopping is one of my favorite things to do in my spare time ;)
