DAY 8: Gluten Free Italian Chex Mix

In honor of football weekend, here's a fun recipe for a great snack to bring to the game. My cousin cannot eat gluten so we are always looking for good tasting gluten free treats. This one tops the charts!

 You will need: 
8 cups Rice Chex® or Corn Chex® cereal 
1/2 cups salted soy nuts (roasted soybeans) 
3 tablespoons olive or canola oil 
3 tablespoons balsamic vinegar 
2 teaspoons garlic powder 
2 teaspoons Italian seasoning 
1 bag (3 ounces) fat-free butter-flavor microwave popcorn, popped 
1/3 cup shredded or grated parmesan cheese

Step 1:
Heat the oven to 300. Mix chex cereal and soy nuts together.
Step 2:
In a smaller bowl mix oil, vinegar, garlic powder, and italian seasoning. Pour this over the cereal and stir until well coated. Add in the popcorn.
Step 3:
Spread out onto an ungreased cookie sheet. Bake for 15min. Stir in the cheese then bake for 10-15min longer. Take it out and let it cool on wax paper for about 10min.

Talk about delicious!!

  1. A WORD TO THE WISE....
    make sure you remove all the uncooked popcorn kernels, they look pretty similar to soy nuts but not as easy to chew!
